Ingredients
- 2x 400g butter beans
- 500g cherry tomatos
- sundried tomatoes
- 2 medium aubergines
- 1 onion
- 4 gloves of garlic
- salt and pepper
- basil
- parmesan cheese (or nutritional yeast)
Instructions
- Preheat oven to 200 degrees Celcius
- Peel aubergine skin into a zebra pattern, ten slice into 1cm rounds, salt heavily and leave in a sieve under a bowl for around 20 mins to drain excess water.
- dice the onion and sundried tomatoes, and slice garlic. Press the aubergines with some kitchen paper to absorb more water, then cover with oil and roast in oven for 20-30 mins or until golden brown.
- Fry the onion for 6-8 mins with a pinch of salt. Add garlic and sundried tomatoes and fry for 6 mins more.
- Add cherry tomatoes, another pinch of salt and fry on medium heat until their skins start to wrinkle.
- Press the tomatoes with a fork to burst, add beans and a little of their juice, then stir through and add aubergine.
- Season with parmesan and basil.
