Spicy Coconut Carrot and Parsnip Soup

Ingredients

  • Olive oil
  • 2 medium onions
  • 2 gloves garlic, minced
  • 1/2 tbsp grated ginger
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp chilli flakes
  • 4 carrots chopped
  • 4 parsnips chopped
  • 4 cups boiling water
  • 2 veggie bouillon cubes — I only do one
  • 420 ml coconut milk — I only do 200 ml

Instructions:

  1. To a large pot on medium-high heat, add the olive oil, onion, and garlic. Cook for 2 - 3 minutes. Then add the ginger, garam masala, cumin, turmeric, and chili flakes.
  2. Cook for another 1 - 2 minutes.
  3. Next, add the carrots, parsnips, boiling water, and bouillon cubes. Stir, cover, and let simmer for 20 minutes.
  4. Use an immersion blender or standing blender to blend until smooth.
  5. Stir in the coconut milk and allow it to heat through.
