Ingredients
- Olive oil
- 2 medium onions
- 2 gloves garlic, minced
- 1/2 tbsp grated ginger
- 1 tsp garam masala
- 1 tsp ground cumin
- 1 tsp turmeric
- 1 tsp chilli flakes
- 4 carrots chopped
- 4 parsnips chopped
- 4 cups boiling water
- 2 veggie bouillon cubes — I only do one
- 420 ml coconut milk — I only do 200 ml
Instructions:
- To a large pot on medium-high heat, add the olive oil, onion, and garlic. Cook for 2 - 3 minutes. Then add the ginger, garam masala, cumin, turmeric, and chili flakes.
- Cook for another 1 - 2 minutes.
- Next, add the carrots, parsnips, boiling water, and bouillon cubes. Stir, cover, and let simmer for 20 minutes.
- Use an immersion blender or standing blender to blend until smooth.
- Stir in the coconut milk and allow it to heat through.
