Ingredients:

  • 1 cup dry bulgur
  • 1 1/3 cup chopped fresh flat leaf parsley
  • 1 cup pomegranate
  • 1/2 cup thinly sliced fresh mint
  • You can add also chopped red onion
  • 1/4 cup roasted pistachios chopped/ almonds (or both)
    For the dressing Lemon ( do not save here- the more lemon you have a great taste!)
    Olive oil
    Salt
    Black pepper

Instructions:
Just put the bulgur in a bowl with water, Cover and set aside for 30 minutes, at which point the bulgur will be softened and cooked
add all the ingredients, mix it together , add the lemon and salt, taste and add more salt if desired😋
